Ok a V-day thing when you still in the early stages (not your GF/ haven't slept together, etc...)
I think you can do it if you go with something fun, silly, and inexpensive.... you want it cute and funny... more of a joke then romantic at this point.
Depending one what your doing on the date, you may be able to think of something that would kind of go with the events.
Lets see once for V-day (I believe it was a 1st or second date with this girl) we were going to see a movie, and before hand I got all super serious all of a sudden and said I had something to give to her... she looked kind of surprised and asked what it was. I drop to one knee and pull out a ring box and hold it out towards her and say "Will you wear my ring?" ... she looked like she was thinking I was a psycho, until then I opened the box... and it was a RingPop (those candy rings).
It worked like a charm, she grabbed it, started laughing, told me how she thought I was some sort of nut who was proposing on our first date, blah blah blah... 99cent ring, and I got laid that night, and also more social proof since she told all her friends (Cheerleading squad), and this was back in my highschool days.
So my vote is something memorable, but not to serious or expensive, etc...
