So what is the best way to deal with this?
I was thinking of saying something along the lines of: "I'll just tell you one for now, but you'll have to discover the rest in person. Your turn."

I think what you're doing is good by qualifying her.

However in my opinion I wouldn't go for the meet up to soon, it might scare her off, this can push them away, I would say keep the banter up for longer and don't rush it.

You could qualify her a little bit more while sprinkling some DHV's like:
