But if I dont mention it, I get responses easily.

Im using Dave M's IID.

Is there a way I can write Im east Indian and still not get turned down by women?

just don't write it! why does it matter to you? if they look at your profile and like the look of you, then you have nothing to worry about.

There is no infield... I'm nervous as hell. In the past, I have tried to approach but right before I approach, I can see the target getting apprehensive. I'm not delusional, just very observant.

So my confidence level is very shitty and I just cannot approach... This is actually affecting my personality detrimental to my well being. I feel self conscious when I'm simply walking out and about.. Im afraid to go to the gym. Im not fat or anything: Im 6'0" and 175 lbs.

That will happen sometimes. What helps is walking over confidently (with conviction) with a smile on your face, don't worry if they're a little nervous though, that will soon pass and probably won't stop them from listening to your opener which will give you a chance to ease their nerves.
