There is a girl in my class that I didn't ask out until just recently. However, it's finals week in a few days and so after I asked her:

"hey, wanted to know what your schedule this week, lets get something to eat before school is over"

she responded:

"Hey, hows your studying going? I am so behind in all my classes right now....I have a really tight schedule...maybe next semester?"

at this point, I know that she is busy but she is also the type that will drop something she is interested in for the sake of work.

if she was really really interested, of course she would try to meet up but where do you guys think i shoudl go from here?

I recommend just letting her study, finals are stressful. And after everything's all done, go out for drinks, you deserve it. Invite her along, and if she comes, good deal. If not, oh well, you earned your break and you can start out fresh over break.

If she was "really really" interested, it might as well have been her asking you out instead, right? It seems like you haven't built enough attraction to make her forego other (more important, in actuality) things in her life so far.

She did not reject you. This is just resistance, which is reasonable on her part as she has a lot of things to cover. Exams make you panicky, man. Realize it is a rational choice she has made, appreciate it and show some patience. You will get your well-deserved opportunity to build attraction at a better time.
