This girl is in one of my classes at university. I noticed her interest in me. I approached her one day in class and sat beside her. Classes are 3 hours long with a break in the middle, so during the break we talk about random stuff. I take advantage of that time to nag her, do kino, and be charismatic.

The first time I met her, after class she was telling me how she loves latin culture and took advantage to escalate a little and got her phone number. She even told me to not forget sending her mine. I also invited her to a latin club, and said she could bring her friends if she wanted and could tag along with us, and that I would teach her how to dance. But she didn't go because her friends did not want to.

The problem with her is that she takes so long to respond to my texts (sometimes 1 day later, and I respond by waiting a long time in response for me not to look too desperate), so I don't what that means. Cause in person its very different.

I invited her again to the club, and she said she would let me know but she didn't and she didn't go.

I don't know if she is just not interested or she just sucks at texting :s
Any advice on what I could do?

You likely have not built enough interest, stop text-ing. Build some attraction in class...if it works she will text YOU! in the meantime MOVE ON!

the thing that worries me in this situation is that if she doesn't answer (whether because shes to shy and doesn't know what to say or because shes not interested) then I would stop texting or calling altogether but it would still be awkward in class and there may be a chance that by calling her I'll fuck it up more than texting.

I was thinking maybe inviting HER out dancing (after class next time) even if her friends can't come. How does that sound?

Do not text her again, wait for her to text you, move on, there is really no need for you to be texting her any more if she's taking days to reply. As a matter of fact if your with other HB's then you could easily increase her interest in you and increase the chance of her texting you.
The only reason it would be awkward is if you make it awkward, ur the man so you should set the SPAM and emotion between you pair, not her. Don't ever be worried about what she feels, just do what you want and dont be scared.
