hey man, depends on what kind of things you or she likes doing. do you know anything that she likes doing?

like some local events, or event in a neighboring towns...etc.
"Lets go out for a coffee to catch up" always works for me.
Or ask her "what are you doing --- day?"
and when she answers, you can say "oh my god me too, I'm planning to go there with (whatever friend of yours) maybe we'll bump into each other"
then girls usually say, "we should meet up there" or something
