Thing is, I have never taken a girl to a coffee shop date, I don't even drink coffee, what do people do on a coffee shop dates? Have you guys got some tips for me about what time of the day works best, and should I pay for the coffee, should I pick her up or meet her there?

Here is what you are doing: you are asking a girl to meet with you in a place you don`t go, to do an activity you don`t do.
What people does in a coffee shop is ENJOY the product sold in that place, nothing more.
So here is a better advice: don`t be shy about your tastes, it`s what it will define if the two of you are going to be together.
Also, stop acting; I`m guessing you are doing this for her, in order to look mature, or maybe becouse she loves coffee, but you don`t. So what remains is to find some common ground between the two of you.
There are a lot of good places where you can ask for milkshakes and stuff that you might enjoy as well, but since both of you are 19 you have to re ask yourself if you really want to go to that place.
A coffee shop is a great place to talk and thats pretty much it. The basic kino you can do is touch her hand, you can look deep in her eyes, and make her talk the shit outta she.
If you like even more parks or attractions or other activities, don`t be shy about it and ask, if she follows it`ll be a nice date.
