I am having a sticking point where I open and I'm a really chatty type of guy and I end up talking...and talking....and talking.... How can I get her to talk to have more invested in the conversation.

Easy. Stop talking talking talking and start talking - listening talking - listening. See the pattern ?

You can get her to talk by using openers that involve her thinking and responding like "Hey,quick question , what do you think of [insert random conversation subject here] ?" Then just hear her out and comment on what she said and so on.
