so my thoughts are, we keep hanging out (it helps that we have mutual friends and the breakup really did go well, no bad blood). and while im not going to hold out for her, if one day we gravitate back toward each other than that would be cool.
i know it probably sounds stupid fairytale stuff but she is a cool girl, and we started out as friends so i dont see why this wont work.
(i acknowledge that i may get jealous when she is with other guys but im a stable person and will be able to get over it, as long as im fucking other girls).
You don't tell us her views on the future so it's hard to judge fully. My concern is that you are putting yourself in a position where you are going to support her through the break up, you are holding out a hope of a future while she moves on. And you are going to help her do this by being around (and physically and emotionally available to her).
What about what is best for you? It is easy to convince yourself that a morsel of something is better than nothing but actually you are just softening the blow for her by letting her see you. You admit you are likely to get jealous so clearly you aren't ready to be friends for real.
My advice would be detatch yourself completely. Find a polite way of doing this. It will enable both of you to clarify your feelings and choose the relationship you want.
It will be hard to do this but it is the best course of action.
