Lately I've been running into this problem after I number close a girl. I'll text her and start a convo some period of time afterwards, but after only 5 or so texts from her, she'll stop responding. And her responses aren't monotonous, in fact they often play along if i joke with them and show great interest.

For example:

Me: (not referring to anything in particular) Congratulations!
Her: Thank you!!
Me: You're welcome! Now that I've texted you your day has become immeasurably better
Her: Haha yes it has, but what are you congratulating me for??
Me: You getting a text from me
Her: It is a great thing to celebrate indeed!
Me: Yeah! I got your friends together and we got you a cake and everything

She hasn't responded since (this was yesterday; this particular girl does this all the time). I'll be having back-and-forth conversations like that, and out of nowhere the girl will stop responding. Obviously I freeze her out for a couple days afterwards, but it makes it difficult to escalate things with her.

Anyone ever have this problem?

I have the same problem...i told the girl if you keep on doing this i will have to put you to time out and stop talking to you..she said she is very sorry and she doesnt mean to but she often forgets to reply to people's texts....im not expert but maybe she just forgets to reply....another thing you can do is end things with a question maybe so she has to reply in order to keep things going or next you be the one to freeze her out and make her feel what u go through

There could be a number of reason for this.
1. She got busy (i.e. work) and forgot to text back.
2. She got bored. She doesn't really like to text message.
3. The joke was over. Nothing more to say.

Yeah, I think the joke was simply already over. You should have moved to talking about something else, or better yet set up a day 2.
