You don't necessarily have to avoid topics like that, just approach them in a different way, for example: if you ask her what she's studying and then go on to "oh, that's so cool, what are you planning on doing with that?" - she's had that conversation a million times before, it's boring. However, if you use a less orthodox response, you can come off as more interesting; I'll use one of Gambler's responses as an example here: "Why not just be a stripper?" (said playfully), after you've joked around a bit, you can always come back to the more mundane stuff to show that you do have an actual interest in what she does.
Long story short: you can take boring topics and throw them down interesting bypaths.
