She is trying to get me to jump through her hoops and i dont wanna even respond back to her. I'm thinking just stop the email and let it go semi-cold, see if she comes back. Or I could just go direct, tell her she knows exactly why I want her number, cuz I WANT HER! in person.

Ok, so you met her, you talked to her and now you guys are emailing. Great! There is mutual interest! In my eyes, she is asking you to be a man and go for what you want. I think you are right, she wants you to jump her hoop, she wants to see if you are for real.
I would email her back, and tell her that i want her number so we could meet up, get to know each other better and have some fun. or just plain: i want your number so we can meet, because i want to get to know you better.
Leaving her cold... i dont think its the time yet actually. I think there is still a big chance that she will leave you cold as well and believe me, its gonna sting harder at your side then at hers.
You was about to enter the field of playing games. Timing is of the essence. And are you prepared for the downside of playing games?
In the end, its your choice what you do, but i strongly advice against playing cold at this moment.
