This comes from Mystery Method I think. A "bitch shield" is a girl being hostile and unfriendly. If a girl gets approached by many guys she begins to blow them off from the very beginning. She isn't reacting to you as a person - she is just treating you as "another guy who tries to pick me up".
DHV-ing is demonstrating higher value. According to evolutionary psychology I think people have 2 main purposes - to survive and replicate. And they call the ability to survive and replicate "Value". Anything that demonstrates that you have better chances of surviving and replicating is considered a DHV.
