I would say thanks, smile, and continue on. If it comes early on in the game, it's an IoI that she is showing interest in you. It may be somewhat of a condescending remark from her and somewhat of a shit test, and by not focusing on it you're showing that you are not only confident, but more concerned with what's going on between you and less interested in her potentially snobby remark. If it comes late in the game, it's probably time to amp things up a little bit. By this point she's saying it because she wants you to know that she is attracted to you, and you can safely return a remark, the wittier the response the more likely it is to create more of a moment for you.

I've found self-depricating humor to be quite useful. It gets her comfortable with you, because you don't take yourself too seriously, and this particular example works a little bit as an effective neg.
