I recently got a 8's phone number after talking to her for awhile, and totally forgot to call her.

This is like a week ago, how do I not come off as I didn't call because I was nervous or hesitant?

Sounds like its a little late. She could have forgotten about you by now. You can call and just play it off like you've been busy doing other things this whole time. Don't bring it up unless she does. If you leave a message and she doesn't call back just leave it. If she does call back set up a time to meet and take it slow. You're probably going to have to rebuild some attraction and comfort.
