I brought this girl I was gaming to a bonfire my friends were having. As I went around introducing each other one of the girls asked "Oh, so are you guys dating?".

It really threw me off guard.

I just said "Well I'm only kinda wheeling her at the moment".

Looking back at it now I feel like that was pretty AFC.
What would be a better thing to say?

same shit happened to me! I said "oh we're uh friends..." I was thinking what the fuck did I just do! and she giggled and just said, "riigghhhtt" lol save!

I don't think you should be worrying at all about what you should have said, my friend.

How did she react to what you originally said?
If it were bad, I'd focus on now "what could have been done?" but more "what should I say next?"

Anyway my answer to your question would be flip it back on her friend and ask her: "Idk, what is dating?". or just be a smart ass and say "Wanna come to the wedding?".

Just don't answer.

When asked such question, NEVER seriously answer it. Use Cocky and Funny.
EX:
"No, she's my stalker. I called the cops on her, that's how it started"
"Oh no, we're divorce. I caught her kissing our bell boy Estevan"

Another technique I like to use is flipping the questions. Simple say "Define dating". The person who asked question will start qualifying. Then I will pick up the topic and steer the conversation away. EX: "Btw, since we're on this topic, how do you think about blah blah blah?"
