I'm shy and I feel like the only way to fix my self esteem is to do things I fear, like hitting on girls. So if I do that enough will I start opening up and being myself more? If not than what other way is their?

You should definately go and start talking to girls in a friendly way, not hitting on them that much. When youll become more confident then move on to more direct and sexual game.

you will start to open up .. but that doesn't mean you will be yourself even more...

does interacting with other people have benefits ? yes it does...

will you give you what you want ? no .. the universe only give what you need , not what you want...

difficult times make you grow as a person ... experiencing .. you will experience rejections , people who cheat and lie ... in the end you will somehow face difficult choices...

I can only speak from experience, but that's how it worked with me. Just do it. It gets easier and easier. All i can say is that I'm much happier with who I am as a person now, than I was when I was a really shy guy.
