You could play it off in a jokey way but you know what girls are like, she'll just keep asking. I'd maybe go for a light-hearted response that she could also accept as a serious answer, so like "I had intentions of hanging out with you next week?" then if she presses you just say you don't like to plan to far ahead, go with the flow, etc. It's a tough one!
