This is my biggest problem. I'm currently talking to a girl (first week) who is definitely into me. If I don't text her in a couple hours she will ask why...etc. But when we talk on the phone, I have to keep the entire conversation alive. This is very frustrating.

Any tips?

try getting her on a Day2. Get her comfortable with you.
I dont know what your relations with this girl have been but thats all i can say if you have just got her number and not really talked much; btw you're gonna bore her to death if you dont establish some comfort because she is gonna feel pressured when she is talking to you
