So I change snaps with two girls from college, and when we walk by there's always a greeting or something.

One I already chatted to, we even set up a date but then se canceled and I decided to not know why, we drifted apart and recently we are talking again.

The other one I never had a real talk with, but when she sees me, she always greet, sometimes even running/jumping, I guess that's a good signal.1

I really want to "profit" one of them, but I really don't know how exactly proceed, having some difficulties on this aspect.

I know I should talk more with them, but I don't know how to initiate a conversation and make it lasts.
Could anyone me help me with that?

Eddie is right, you should set up another date with the first girl. Life happens and her schedule might change, doesn't mean she isn't into you. There are many ways to reinitiate the conversation with your approach. The best way is to open situationally as it is more relatable to the environment and present moment. Since you already know them, it's a warm approach so it's easer to start the conversation again.

Once you open, you can transition into more of an interesting conversation. Qualify her and escalate. You don't need to break much rapport with the second girl as it seems she's already pretty attracted to you. If you can't close her then due to logistics, set up a date at a high point in the interaction and go for the full close then.
