So I went on a coffee date with a girl 3 days ago, the only other form of contact we have had since then is a facebook conversation about a song I was telling her about on our date. Now I was to know what to say to her over the phone to arrange another date before she goes back home to her family for Christmas

Seriously though, you ought to include details concerning your interactions in future posts.
For us, readers, there's no context to your question.

Anyway, don't call her. Send her a direct text, detailing place and location. Tell her to dress nice.
That is, of course, if she really is attracted or interested in you, since you didn't mention how your date went.
