Firstly, if you need the job, don't do it. If a girl just has particularly high interest in you then maybe slight flirting would be ok. And if every time you are talking to her table she starts up a conversation you could pretty easily squeeze in a "sounds interesting, I never do this at work, but give me your number so we can talk about that later, like this weekend or something". Never pull out your phone at the table and take a number. Write it on your pad and put it in your phone in the back or something so you are much less noticeable. Or even get her to write it on the store copy receipt and put it in your phone or something.
Any more than that and I think you're just going to be on your boss's bad side.
But in general I'd say go out of your way to be a good waiter. Be attentive, over do the eye contact and the smile. Women open up considerably more to a guy with great eye contact and a smile. And that will present with more opportunities.
But in general I'd say that you have to see some interest first. Otherwise you're the weird waiter that rudely interrupted her and her friends meal. And you don't want to do that.
