One of my self limiting beliefs is that I don't know what they think is cool or intersting .

What do _you_ think is interesting? I mean, let's say you meet a bunch of women and you end up constantly doing things you hate... sound like much fun?

Granted there are some limitations, like staying at home playing video games solo isn't going to get you very far. You could just try different things and see if you like them. Salsa dancing, skydiving, travel... anything that has people around. Even if you don't meet women that way you will probably pick up some interesting stories.

Also as some people say it's better to be interested than interesting. Lots of people (especially women) love to talk about themselves, so asking them about their interests is probably going to get you farther than asking us about their interests.

You have it right in front of your nose. You ask us "what's interesting?", when you can as well ask the girl exactly the same question, "what do you find interesting?". That's a thread starter, and a good way to get to know her.
