She isn't like this with other people (from what I see). These aren't things of genuine concern. Just small things. And when I offer assistance, she will sometimes disregard it and go with what she thinks.
What do you guys think of this? Any advise?

It could be something left undealt with in the relationship itself, or a behavior that is inadvertently triggering her. Open a dialogue about it, but when you two are in a bit better of a place.
