At this point, I'm usually the one who initiates but she always replies enthusiastically, asks me questions, etc. I normally end the convo after 6-8 texts each.
We've made plans to hang out a few times, but we've both flaked on each other. I figured that maybe I needed to work on more comfort via text so she gets comfortable with the idea of meeting up with me.
Anyway, as much as I enjoy texting this girl, I'm very aware to not text too much where I'll just turn into a 'text buddy' of hers that she never meets up with.
So basically my question is, what's the difference between pinging/comfort building via text and being just a text friendzone?

I would try to get away from making yourself look over interested and if you do hang out with her and have a good time texting from there on will be easy because you have more rapport.
