Quick question.

I have it drummed into my head that you should be texting a girl everyday, but on the flip side, you can come off looking like you're desperate a needy.

What would be the ideal amount of texting? And should it be you that initiates it or is it better to wait for her? I feel like that I should wait for her, because that is a good indicator that she is thinking about me and wants to talk.

Just find multiple girls to text, and as long as your constant texting isnt detrimental to your situation with that girl then dont worry about how much your doing it.

As long as the girl is keeping your pace with quality answers (more like only a smiley or oneliner) everything is fine. If you get these kinds of answers, reduce the amount of messages.

She usually sends off big paragraphs (5-6 sentences) so it's all good. She sends more detail than me haha.

sounds to me that if she is spending that much time texting and going into such detail shes keen but IMO texting is good but calling after a few texts is alot more personal with can be good if your confidence is up there but bad if your abit shy.
