I was at a club last night on the dance floor with some friends. There was a girl n a guy dancing next to me, they were facing each other, sort of together on their own. But the girl was obviously not enjoying it at all, looking around a bit, that stereotypical guy going for it n girl not showing much interest. I really wanted to get in their n start dancing with her myself but had no idea how to get conversation going!? After about 10 mins she left.

I've read a bit into openers n stuff but I just couldn't think what to do! Been kicking myself so much that I joined this forum (dont worry I wont troll). The only thing I knew I probably should have done was start conversation with the guy first. Would that have been the thing to do?

Just to describe the situation a bit more: crowded dance floor, neither of them were wearing anything very interesting or had anything a bit different I could comment on. He was quite tall but not meaning to sound like a dick I'd say I'm a lot better looking!

She wanted you to approach her. Couple of days ago I'm in a club bathroom and this girl is bitching to another girl "Fuck, no one is approaching me." This is how they feel, they always want you to approach them. As for you couldn't think of anything to say part, I know it's true. The thing is, in that moment you are so overwhelmed since this is still new for you, that you actually can't think anything to say. Good thing is THIS IS NOT TIME FOR THINKING, THIS IS TIME FOR ACTION. Next time just say Hey, how many oceans are there?
Don't beat yourself up. As for should you approach the guy first, that depends. If he was a cool guy, I would talk to him first. If not, I wouldn't pay any attention to him.
Looks means shit. It's all avatar. It's how you see yourself and how you present yourself. As for you couldn't comment on anything interesting they were wearing you could say "I was shopping with my friend earlier this evening and she bought this great outrageous necklace for her roommate's birthday. I don't know her roommate, but I think it would look good on you." Or whatever. Words matter only so much.
