I know a lot of this is to do with confidence as after a few drinks my delivery usually improves quite a lot however even then it's not great, I feel my material is generally quite good but my wording/expressions and tone isn't great and I realise how important all of these are.

I try to practice but a lot of openers and routines out there seem to be suited for quite hyper, loud people, although I can be like that.. I feel my 'style' is dry humour with a bit of cheekiness.

So to cut to the question... should I stick to the more hyper/loud/exaggerated routines etc? If so does anyone know any resources to help tonality etc. or should I just stick with my natural humour style and adapt routines?

There are loud comedians and there are quiet comedians. The end goal is laughter.

There are loud CEO's and quiet CEO's. The end goal is to lead the company.

There's no reason to make up a 'character' for yourself. Just be aware of your surroundings and keep in mind of your end goal. You'll naturally be a little louder or little quieter to match each situation.

Great analogy, kasbi, the answer is simply do what's natural to your personality. Have you ever seen a MPUA that has a very similar personality? doubtful.

On the analogy of comedians, the best comedians at least, they're not reaction seeking, they present their material the way they like it, not the way they think the crowd will like it. They don't present their material based off the crowds reaction.

^This is not correct.

Every successful entertainer is well aware of his/her market and caters to it. If they get a bad reaction from a particular show, they will edit, revise, and progress their act to better suit the audience the next time around. . . if not, they go out of business.

I don't really want to get into a debate about modern entertainment deliveries, but since you disagree, I'll explain my point.

I was not saying preparation based around what people find funny is a bad idea, I was referring to their state of mind. i.e, if they get to their punch line, and no body laughs, they will continue with the same drive throw their show in the same manner.

They're not going to stop and think "oh crap, they didn't laugh at that, maybe I shouldn't say the next part of the joke as they won't find it funny" and try to compromise by saying something in order to try and get a reaction. They're going to stick to keep their current mind's focus, because they know what they're delivering is quality in their eyes. They can asses and review the crowds reaction later.

Let's try and not automatically disagree, instead understand what each others point.

This is good advice but difficult to follow if you write the EXACT opposite of what you intended to share.
