models/celebrities/actresses/etc. generally go wild on monday/tuesday/wednesday nights. some of the hottest clubs in NYC (like Butter) have their best nights on mondays. They don't go out thurs-sun because that's when all the "normal" people go out that have regular nine to five jobs, and they want to avoid those people.
The key is you generally have to be going out in a city that has models/actresses (Like LA, NYC, London, Paris, etc.), and you have to go to a trendy/hot place that those kind of people would go to, not a local dive bar.
