Hi. I approached a girl and asked her;

"How are you?"

and got a

"Why do you ask stuff you dont really want to know / dont care about?" (something along these lines, I translated it from my language)

I was trying to figure out an intelligent response but couldn't find one. Anyone has any ideas?

She was pretty much right...
I don't see this as a bitch shield, lolz.

You need an opinion opener or something like that. Compliment her, ask for an opinion, talk about the surroundings, start being playful with her (cautios with the playful BE LIGHT)
How are you? is a terrible thing to ask strangers as it makes them feel uncomfortable and seriously, why the fuck do you wanna know that?

Yeah, but I forgot to mention that I knew the girl from before (not really knew, just was on hello-hi - we did talk before).

That's why I didn't use a classis opener.

your frame = you want to know how she feels

her frame = she thinks you don't want to know how she feels

person who is more certain of what they want, won't react to the others frame, stronger frame absorbs the weaker frame, know your purpose and where you intend to lead to, and lead in that direction, if she tries to side step, don't step with her, stay on your game, be sure of yourself
