The first date went great but the second was not so good. She was really hung over and not really great company. She had to cut the date short as her dog got injured, her flat mate called her and told her. I text her when I got home to make sure everything was okay. I then didn't text her until Sunday night when I asked her how her weekend had gone. She didn't text back till last night when she wrote this....
'Hi I am so sorry I fogot to text back I have been so busy. Oscars ok now, got some.medicine for him and he is managing to walk a bit. Hope you are ok xx'
What's a good way of responding to this? Obviously I need to make it seem like I haven't been waiting round for her text but not sure how to word this. Sorry if this is a stupid question but I'm kinda new to this whole thing.

just tell her you are glad to hear the dog is fine. then invite her to join you at the place you were headed to go have a quick bite to eat at.

I think thats what happened here. look at the last msg she sent you.....she didn't ask you anything, didn't say anything that would continue the conversation. if i were you i would leave it a couple of days before replying and reply with something confident and positive. if it gets the conversation rolling, then text for a day or two and then try and sort out another date. if her response is negative.....ditch her

You know, from my experience, the "hope you are ok" statement never came from someone who wanted me on a sexual level, at least at the time the girl said it.
