"You wish" is a forced response. In other words, they will ONLY say it if you provoke it, so if you can't deal with it, don't provoke it. Some negative effects of your provocation are:
1) She will usually respond with a denial like "you wish"...
2) More importantly, she will immediately try to think of ways to prove you wrong, causing her to focus on your negative aspects and causing her to lose any attraction for you that you may have previously built up.
3) It is an approval-seeking thing you said that makes you look desperate, because it clear that this is just something you wish she would say.
Rather than say "you have only one thing on the brain (sex)", you are better off turning it into a question like, "are you really trying to make this sexual again? is that all you have to think about?"
Now it's more likely that she replies with a less cocky response, more on the lines of "no im not!" which keeps you in the power position.
At any rate, a decent reply to "you wish" would be to agree with her in an over the top sarcastic way.
