English has a lot of ambiguities. One of them is the expression "I wouldn't...."

for example when someone says "I wouldn't worry about it" they are really saying "YOU don't worry about it" linguistically, it sounds weird when someone says "you gained some weight? oh, I wouldn't worry about it" here, they are really saying "YOU shouldn't worry about it." if English is your first language you have seen this expression all your life and it probably doesn't bother you but it is definitely ambiguous.

anyway, the point of all this:
I told this girl "you are German?"
she said "yes, I don't look German?"
I said "kind of, but I wouldn't be 100% sure"

by this, I meant "If someone asked me where is this girl from, I wouldn't be 100% sure"
she thought I mean "kind of, but YOU shouldn't be 100% sure"

that's just an example, there are many times when people misinterpret things.

What is a good way to control the situation when a girl misinterprets what you said?
what if you don't realize she misinterpreted until hours later?

I just change the subject...or let the moment pass and move on to another emotion/mindset...I don't know, I do well under pressure so it is hard to explain.

Respond to her emotion not her words. That saves you all this trouble.
