This is a weird question. In the best way to describe this, when your with a girl and they do things that are out of character, like saying things that are out of character or like touching you out of the blue,do you trust your gut and pursue or not?

Trusting your gut is most of the times if not always the best thing to do. The alternative to this is 'thinking things through'. That doesn't mean I'm suggesting you never use your head. But in most cases I find it that in intense situations where windows of opportunity will close very fast , your gut is your best friend.

The gut tells you things as it sees them, the blunt reality. Your mind perceives things differently because it's directly influenced by external factors.

Example:

You're on a date with hb10. You're eyes lock. There's a moment of silence. You're close to each-other and you see a glimpse of desire on her lips. You're gut is screaming , literally screaming at you from within as your brain floods with adrenaline and endorphins :

"KISS HER YOU DAMNED FOOL. DO IT NOW , NOW IS THE TIME"

Your mind is also present. But your mind is confused. All the excitement , your surroundings , the moment itself and our oldest most hated enemy , Fear , tear the moment asunder and confuse your mind further. You start over-thinking. "Am I seeing things as I want to ? what if she'll reject me ? she's a hb10 how could she possibly want to kiss me ? there's no way this can be true ". By the time you stop questioning yourself, the window of opportunity will long since have closed.

Your gut is once again disappointed in you.

I know this isn't 100% related to your question , but what I'm trying to prove a point. If your gut tells you "Dude, she totally wants to slaughter you cox" What could you possibly have to lose by pursuing ?
