Lemmie tell you a story.
About 10 years ago I started working in the restaurant industry. I started out as a bus boy and worked evenings after school. I decided that I really wanted to work in the kitchen and so I asked my boss if I could. He said it was rather tough to find me a place because I was too young to use a knife (15 in Alabama), but he said he would try. Luckily for me, he let me be the "salad boy". Lol, I know. Shut up. What I ACTUALLY did was tear the salad up by hand and then plate it for all the workers. I did this for about 9 months.
(Now here is the part that actually pertains to you)
During those 9 months I watched all the cooks and chefs doing their work. Their knife skills were absolutely amazing. I was always wondering how they could move the knife so fast without cutting themselves. Well, one day I saw the Sous chef go to take a break and I followed behind him and when he sat down I asked him "How do you guys move your knife so fast without cutting yourself? I would be scared I would cut my whole damn finger off."
He quickly lit up a cigarette and then spread out his hands to me and said "We don't." Thats when I noticed his hands were covered in scars. Dozens of them, all over his fingers and quite a few even up his arms. I asked "Well, aren't you scared your going to get cut again?" His reply was "Yeah, but getting cut is part of the job. You use a knife long enough, your gonna get cut. The key is to use it properly and cut probably won't be too bad." He went on to show me the proper way to hold a knife and how to slide when I cut and tons of other things. The point I am trying to say here is that...
Yeah, your gonna get cut... but starting with good fundamental knowledge can really lessen the severity.
SO, You know how to do it... your ready to try... you afraid of a little cut?
Just go do it.
