So I am a believer of setting yourself apart from the crowd, aka peacocking. Problem is that, I have no idea what I can actually do to stick out. I'm on the track to being a doctor, so I can't have a bunch of crazy visible tattoos, large piercings, etc. My hair grows short so I can't really do much with it. And I have a job lined up, but they are taking forever hiring me, so I can't really do anything expensive. Hoping someone on this forum has any ideas/help for me :/.

(For an idea of what I look like, I'm on FB (Evan Hayes, I'm dressed up wearing a royal blue tie) and on Instagram (DrHayes91).

How about CLOTHES?

You dont need to have tattoos and shit... I mean i do agree that its not that easy to find some nice clothes.
But just go online for some great sites.
I honestly never find any clothes i like in a "usual" store. I like fancy and modern fashion. This has nothing to do with pick up in my case i been like that all my life.

What is your personal style or look? Maybe we can give you some better advice then.
What clothes and styles do you like? Fancy? Goth look? Modern? Surfer look? casual? Business look? Rock Star?

During the day, especially in school, I do go casual due to the fact that most of my mentors are doctorates. So I'm influenced by them a lot. When I go out though, I try to go out the box. I may be too subtle though, lie wearing pants with flamingos (instead of polo horse), or wearing an arrowhead necklace (which I don't see much).

As JTQatar mentioned,

Clothes and accessories should be your first line of 'attack' when it comes to differentiating yourself from the crowd.

Now, this doesn't necessarily means over-the-top bright, attention grabbing pieces (and in most cases they make men look like clowns).

Firstly, it's about wearing clothes better (fit, cuts, color and fabric coordination), so you can even take a simple shirt+khakis outfit and make it look hot. F.e. http://www.pinterest.com/pin/481111172664941937/

Secondly, introduce less common and more flattering pieces like vests, good looking/cool shoes, belts, scarfs, ties, etc. F.e. http://www.pinterest.com/pin/481111172664896566/ (jeans) http://www.pinterest.com/pin/481111172664896572/ (jacket, bag)

Lastly, manage focus - you don't want too many peacock pieces (it should be subtle) and instead build outfits so that other pieces emphasize and draw attention wherever you want it to go.

It's hard to go more specifically without actual examples of your casual/night out looks and other preferences. Still, hope this helps.
